One of the factors (but not the main one) for the high min temps and humidity in the Indo-gangetic plains are the paddy fields. North India is basically a giant swamp of rice. Shallow hot waters keep the humidity and temps high even in the dry season.
It's similar to the corn sweat phenomenon in the American Midwest but on a much larger scale.
