This time I flip the subject to the most interesting months instead. Since I'm warmth-biased I'll go with:
1) May. This month has a bit of everything, from cooler spells to sudden 25°C bursts of sunny warm weather. Always tends to be sunny and diurnals are strong.
2) July. Can go either way: may result in brief subtropical heat, can be a washout, and nights can range from 7-8°C to above 20°C. 3) August. Mainly for the contrast between the early month and the latter part. This year it came out as 24/14 after two completely different phases. During heat waves, often the strongest heat of the year emerges in it as well. Being quite rainy at times, August is also the most unpredictable month in that regard. A sunny day can often get completely turned on its head by 4 pm.
April is close to being nominated but it's more frustrating rather than interesting most of the time. Either way, it's virtually tied with August - had the latter not received those early month heat bursts April would've edged it.

March, May and October for us
March=can be very rainy or bone dry depending on the year (this is the month that the winter wet season usually transitions to the spring dry season); can get days with highs 12° to 15°C early, and later on can hit 33°C+
May=Still Spring some years, early start to summer in others. Almost every may has a dry cold front come though early that gives us a 26°C high and 14°C low, then can hit 42°C+ Memorial Day. Quite windy month as well, but usually no rain and few if any clouds
October=First couple days still hot (can hit 40°C+), then by week 2, a dry cold front usually comes through and sends highs down to 30°C or less, generally get one more warm up to 35°C+ in week 3, Halloween can be cold some years (below 20°C) or as high as 35°C in others, probably our most variable month of the year. It is generally dry, as it is the core month of our fall dry season

No months are "interesting" in the UK's climate. But perhaps February (can be very cold and also get very mild), May (a variety of weather) and July (most chance of heat and storms).

- January. Winter storm season with a good chance of cold waves. I'd pick December for the darkness but they've been disappointing lately.
- June. Super long days, fresh verdant foliage and there's good chance of storms and interesting weather compared to spring.
- September. The tug of war between summer and fall with gorgeous skies, variable weather and rapidly dropping temps.

January brings the heatwaves and dry weather, November brings a mix of weather, and the few storms we get tend to happen in November and December.

January. Might be oceanic stratocrapulus or Siberian cold. January is still windstorm season too.
May. Has a little bit of everything, can go from single digit highs to 30C within a few days.
July. Everything from cold oceanic rain to oppressive heatwave and handsome orage with hail and shit.

June, July and August are the three most interesting months here. Now June can have both cool showery weather (like the first half of this June) and warm dry summery weather within a couple of weeks, I'll say that August is the single most interesting month, as there can be heat waves with highs reaching up to the mid-high 90s/low 100s F and also because August is wetter than July (i.e. better chance for thunderstorms).

August, September, October—in no particular order.
The most violent frontal storms, and highly variable in the case of Sep & Oct.

Traditonally, December and Jan...biggest likelyhood of heat and storms. Then maybe June, can get some serious frosts.

January: Heatwaves can be a novelty, especially record highs
September: Ahhh...spring. The smell, the flowers, the beautiful dry weather
October: Even more 'springy' with many beautiful plants blooming around this time. The month is also mostly sunny, atmospheric (hazy) and dry, with first signs of thunderstorms (again, a novelty...but only at first, as they would get repetitive and mundane by late summer)
