Probably winter. Tend to prefer temperatures don’t deviate too far from the averages in winter while it’s nice to feel a cool and warm days show up alternately in summer(never stay on one side too long). Although in my dream climate, either season sees similar temperature ranges.

It depends on the climate, but for here I'd say summer. I don't want cold weather in summer but I want the average day to be comfortable. Variable winters have a chance of cold snaps (good) but also more thaws (bad), so I have a mixed opinion on that. If winter mean temps were a little colder than I'd be fine with more variable winters. Or if you want to get into fantasy land, have winter be stable below-freezing, with no warm fronts, only the occasional cold snap.
If I was a gardener in a climate with cool (not cold) winters then I'd say a stable winter to avoid killing frosts.

Winter should be more stable, so that extremely cold temps and snow cover in winter are avoided. Summer instability is fine, highs flipping from 75ºF to 100ºF sounds decent.

In my dream climate summer is more stable. I like winter instability more so you could have a few interesting cold days and frosts but also warm days as a break from chilly weather. Don't see the value of frequent 40c days or 10c nights in summer.

Winter. I find the North American stable summers uncomfortable, boring, and annoying.
