Tbh, when I was in Central Otago the sun felt quite pleasant and the humidity was nice and low. When I was in Motueka however, it was quite Humid and the sun was really, really strong...more like Auckland. Yep, for sure -the sun can feel pleasant there during summer, just as it can here at times, but I've spent time in Central Otago in most of the last 35 summers or so, and a burning, glaring sun are an undeniable feature of the climate, as I see it. Can't say the sun intensity there ever bothered me. It can feel significantly stronger here at a lower latitude, regardless of temperature.

I would rate it a C+, very comfortable summer with cool nights, winter looks a still a bit on the mild site for me at daytime, but seems to get a lot of night frosts. What about snowfalls there, can you expect at least one, two settling falls per winter?

Invercargill is too oceanic and not nearly snowy enough. I think the highlands around Dunedin should have some Sari classics though If you've looked at elevation there? In combination with orographic lift I assume there can be epic snowfall there.

The highest houses I was able to find in a well-populated area were at 303m. There's even a station not far from it on wunderground, but it only shows current conditions and not historical weather of any kind.

It's a C for me. Summers look very pleasant but winters look meh. Too dry overall too.
