I had no idea that the ground gets THAT cold here...lmao wtf...and how do plants survive it? Or maybe these readings are wrong (they're from BOM mind you)...

Those ground temps don't seem like anything special. Cold air sinks and pools near the ground and in low spots overnight during radiational cooling setups. That's why you can get ground frost with minimum temps well above freezing.

At first glance it seems hard to believe.... but there are examples elsewhere in AU of grass temps being substantially lower than the temps recorded in a Stevenson Screen The screen temp that morning in 1970 was -4.2c

Especially in locations with shallow low spots where cold air can pool, I've seen ground frost occur with 39-41°F temps at 6 ft AGL in clear nights with calm winds before elsewhere (not so much here).

That's the min temps at the Liverpool ( Whitlam Centre ) site that you posted re the -12.1c grass temps... on that morning the screen temp was -4.2c as highlighted.
